Tons of Turkey
Do you have lots of leftover turkey every year? Does your family get tired of eating turkey salad sandwiches every day for a week after Thanksgiving? Instead of boring leftovers this year, get creative! Here are some ideas to get you started.
2 cups finely chopped lettuce
1 cup diced cooked turkey
1 hard-cooked egg, chopped
1 medium tomato, seeded and chopped
1 ounce crumbled blue cheese
3 slices bacon, cooked crisp and crumbled
1 avocado, pitted, peeled, and diced
4 green onions, chopped
French or blue cheese dressing
Arrange lettuce on a large plate. Arrange other ingredients on top of lettuce. This is traditionally arranged in rows. Serve with French or blue cheese dressing. Makes 2 servings.
BBQ Turkey Sandwich
Bottled BBQ sauce
Diced leftover turkey
Sliced red onion
Heat BBQ sauce in a pan. Add turkey and simmer, stirring, until turkey is heated through. Serve on warm buns, with pickle slices and red onion.
Easy Turkey & Mushroom Potpie
1 package (16 oz.) frozen mixed vegetables
2 cups cooked turkey, diced
1 cup sliced mushrooms
1 onion, diced
1-1/2 cups turkey gravy (from scratch or store-bought)
salt and pepper to taste
1 refrigerated pie crust, thawed to room temperature
Cook vegetables according to package. Mix with turkey, gravy, mushrooms, onion, salt, and pepper in a large baking dish. Place pie crust on top and trim and seal edges. Cut several slits in crust. Bake in a preheated 400 degree oven for 25 to 30 minutes or until crust is golden brown and mixture is hot and bubbly.
